Broccoli Soup with a Tahini Cream Swirl

This delicious and highly nutritious soup is a perfect lunch (or breakfast?!)
Serves 2
Ingredients:
1 tbsp olive /avocado oil
1 small chopped onion
2 crushed garlic cloves
1tbsp nutritional yeast flakes (this will boost the protein content)
1cm piece of root ginger, peeled and grated
Whole broccoli, cut into florets
400g/14oz can coconut milk
200ml/1 cup chicken stock/homemade broth (see recipe for broth)
Sea salt
Ground black pepper
Creamy tahini swirl:
2 tbsp tahini
5 tbsp coconut yogurt
1 tbsp lemon juice
1 tbsp chopped coriander leaves
Instructions:
Heat the oil in a large saucepan over a medium heat and cook the onion, garlic and ginger for 3–4 minutes until the onion begins to soften
Add the broccoli, coconut milk, yeast flakes and chicken stock
Bring to the boil then reduce the heat and simmer gently for 10 minutes or until the broccoli is just soft
Season with salt and pepper to taste
Mix together the tahini, yogurt and lemon juice with 1 tablespoon water to form a thick sauce (add more water if needed)
Serve the soup with a swirl of tahini cream and a scattering of coriander leaves
