Is gluten sensitivity a fad?

There seems to have been a dramatic increase in rates of gluten sensitivity.
This doesn't just come from people self-diagnosing.
Recent research looking at blood samples from 10,000 military personnel compared with blood samples from 30 years matched for age and sex, showed a significant increase in blood samples containing gluten antibodies, indicating gluten sensitivity.
What could be the reason for gluten being more immune reactive now?
Factors include:
The hybridisation of gluten to make it more pest and weather resistant
The protein structure of gluten has changed with modern processing making it more immune reactive
Glyphospates used on wheat crops have been linked with gluten sensitivity
Storage of wheat can produce mold aflotoxins which can also increase immune sensitivity
If possible, I routinely test my MS clients for gluten sensitivity using Cyrex Labs. The type of test is important as many labs only test for antibodies to alpha gliadin but the immune system can react to many other components in wheat.
